Smoked Gouda: Semi hard cheese with a creamy texture, light smoky flavor, and mild nutty flavor. Easy to cut and grate, also melts beautifully. This cheese will make any recipe you usually put your average cheese in, taste like a gourmet dish…without any extra work! It is also delightful as a snack, the flavor stands alone and is great before or after meals. Enjoy with a beer or glass of wine at any gathering.
Ginger Bell Gouda: Red bell peppers, ginger, garlic, onion add a nice flavor to this gouda.
Jalapeno Gouda: Just the right amount of spice to add some flair to your dish or sandwich.
Havarti: Semi-soft cow’s-milk cheese created in the mid-1800s by Hanne Nielsen, a Danish woman who traveled around Europe to learn cheesemaking techniques. Upon returning to her farm in Denmark, she experimented with washing her curds in fresh spring water before pressing them into cheese molds and draining them. This resulted in a soft, creamy new cheese that she named after her farm, Havarthigaard. Havarti is smooth, with no rind, and pale in color, with very small and irregular “eyes”. It has a buttery aroma, and creamy flavor.
Tomato Basil Feta: Pickled curd cheese that has a salty and tangy taste enhanced by the brine solution. Feta can be crumbled on pasta or a salad. It can also be melted in spanakopita or pizza. It tastes delicious with olive oil, roasted red peppers and nuts. The salty flavor of Feta pairs well with beer, Pinot Noir, Sauvignon Blanc and Zinfandel.
Farmstead Swiss (Maasdammer): Semi-hard cheese in the swiss family of cheeses, but is sweeter and creamier than a traditional swiss cheese. Farmstead Swiss originated in the town of Maasdam in Holland as an alternative to the more expensive Emmentaler. Farmstead Swiss has a sweet buttery, nutty taste with a fruity background and is lovely in casseroles, fondue, and sandwiches. It is also a perfect pairing with fruit.
Garlic Dill Cheddar: Originated in the village of Cheddar, England and is now the most popular selling cheese in the world. A firm, cow’s milk cheese that ranges in flavor from mild to extra sharp. Orange cheddars are colored with annatto, a natural dye, but Appel leaves out the dye to produce creamy white cheddar. As cheddar slowly ages, it loses moisture and its texture becomes drier and more crumbly as the flavor intensifies. They began making Cheddar in March of 2001.
